From Soybean Phytosterols to Steroid Hormones, ResearchGate
Soybean is a food crop in high demand in Northeast Asia. Besides protein and oil, soybean is also a rich source of health-beneficial secondary metabolites such as flavonoids, terpenes, and alkaloids.
1.6.3 Soy Oil. Soybean oil finds numerous applications in the production of drying oil, inks for newspaper and offset printing, plasticizer, surfactant, dimmer acids, hydraulic fluids, insecticides and fungicides, solvents and cleaners, water-dispersible poly resins, and biodiesel (Honary 1996; Sonntag 1985; Kinney and Clemente 2005).

One-step rapid extraction of phytosterols from vegetable oils
The content of campesterol varied from 54 mg/100 g in sunflower oil to 317 mg/100 g in canola oil. The contents of stigmasterol varied from 7 mg/100 g in canola oil to 62 mg/100 g in soybean oil. The variation in the content of β-sitosterol was from 156 mg/100 g in soybean oil to 540 mg/100 g in corn oil.
Phytosterols are widely distributed in plant sources, especially oil seeds like corn, soybean and rapeseed. They are well known for their various bioactive properties, such as reducing intestinal cholesterol absorption and potential contributions to the prevention of cancer, cardiovascular and metabolic diseases [[1], [2], [3]].

Soybean oil bodies: A review on composition, properties, food
The integral and extrinsic bioactive proteins in the aqueous extracted soybean oil bodies: NA: NA: 24 KDa: 18 KDa 16 KDa: 27 kDa, 29 kDa: 41 kDa: Zhao et al. (2013) The characterization of soybean oil body integral oleosin isoforms and the effects of alkaline pH on them: NA: NA: 24 KDa: 18 KDa 16 KDa: NA: NA: Cao et al. (2015)
Phytosterols have been classified as 4-desmethyl sterols of the cholestane series, all of which have double bonds at the C-5 position of the ring. More than 200 different types of phytosterols have been reported in plant species, being the most commonly encountered β-sitosterol, campesterol and stigmasterol (see Fig. 1).

Recovery of Phytosterols from Waste Residue of Soybean Oil
Soybean oil deodorizer distillate (SODD) is obtained as a byproduct of the deodorization step during the refining of soybean oil. In the refining of soybean oil, most bioactive compounds such as free phytosterols, fatty acid steryl esters (FASEs), tocopherols and squalenes are concentrated (Woerfel, 1995; Ve rleyen et al., 2001).
Another very important source of phytosterols is soybean, which constitutes a highly remarkable food additive in Asia and all over the World. Soybean oil has lately gained good acceptance in cuisine everywhere . Paper and sugarcane as well as soybean industries are currently developing in Vietnam [10, 18, 22].
