Hi Mary, the shelf life of LouAna Peanut Oil is 18 months if unopened, 6-9 months once opened. You may deep-fry with peanut oil, and can usually reuse it 3-4 times. Allow the oil to cool, at least to 150°F, before straining it and pouring it back into the HDPE container.
This is REFINED peanut oil, often confused with traditional Asian, commonly used semi-refined peanut oil. The most flavorful peanut oil—unrefined—is used as a finishing oil. Refined has the highest burn temperature but the least flavor. Semi-refined is the happy medium, medium smoke point and still smells and tastes like peanuts.

Peanut oil is made from the seeds of a peanut plant. Most peanut oil is refined, neutral in flavor, and great for high-heat cooking, especially stir-frying and deep-frying, because it doesn’t absorb the flavor of other foods, and also because it has a high smoke point of 450 degrees.
The downside? Well, peanut oil doesn’t come cheap! And you’re gonna need about 2.5 gallons of oil to fill up the large turkey fryer... PRO TIP: Save the original peanut oil container after filling your turkey fryer pot. When you've finished deep frying your turkey, allow the peanut oil to cool completely.
