Sesame is principally used to generate oil, which is produced by chemical refining or pressing. Sesame meal, as a main byproduct of sesame oil extraction, is usually discarded, causing resource waste and economic loss. Sesame meal is rich in sesame protein and three types of sesame lignans (sesamin, sesamolin, and sesamol). Sesame protein extracted via a physical method and an enzymic method

Sesame Profile | Agricultural Marketing Resource Center
Sesame Oil Commercially, sesame oil comes in two types. One type of sesame oil is a pale yellow liquid and has a pleasant grain-like odor and somewhat nutty taste. This oil is high in polyunsaturated fats, ranking fourth behind safflower, soybean and corn oil. It is excellent for use as a frying oil, in cosmetics and in food preparations.
Sesame oil may sometimes contain higher levels of α-tocopherol than the seeds. However, the exact amount can differ significantly. One study found that sesame seed oil extracts had a higher total phenolic content (TPC) than α-tocopherol. Specifically, the TPC in sesame oil was 26.00 mg GAE/g of extract, while α-tocopherol was 18.00 mg GAE/g .
